Spaghetti Ramano
An authentic Italian recipe from
South Coast Winery's very own barista & tour concierge, Jennifer C.
"I owe this recipe to my dad, Joseph."

1 pkg Sweet Italian Sausage, casing cut & removed
1/4 cup Olive Oil
1/4 cup Butter
4 cloves Garlic, pressed
Mushrooms, sliced (button or portabella)
1/4 - 1/2 cup Basil
5 Eggs, beaten
1 lb. Linguine
Parmesan and/or Romano Cheese, grated
3/4 cup South Coast Winery Chardonnay Sans Chêne (optional)

1. Add water to a large pot and bring to a boil. While you are waiting for the water to boil, begin preparation of the rest of the dish.

2. Beat eggs and set aside.

3. In a large saucepan over low heat, add the olive oil and butter. Add the garlic and cook until a golden brown. Be careful not to brown the butter. Remove the garlic from the pan and set aside.

4. Add the sausage and brown. Add mushrooms and heat through.

5. Add linuine to boiling water and cook until al dente. As soon as the pasta is ready, quickly strain in a colander and add back into the hot pot. Quickly pour the eggs over the pasta and begin gently tossing the pasta with two forks. The heat from the pan and the pasta will cook the eggs. It will take about 2 minutes (or slightly longer) to cook the eggs.
Note: To be successful with this step, the pasta needs to be really hot.

6. Add the sausage, mushrooms, garlic, and basil to the pasta. Toss to coat.

7. Optional Step - Pour the wine into the saucepan. Scrape the tidbits loose and cook down the wine about 4 - 5 minutes. Pour on top of the pasta.

8. Serve and top with cheese. Pair delectably with 2005 Wild Horse Peak Sangiovese.

The course takes you strolling (or running) through the pristine vineyards of South Coast Winery, the new and upcoming Carter Estate Vineyards, and on to Falkner Winery before heading back to South Coast Winery Resort & Spa for a celebration, where music and refreshments await you.
